  • 1 medium avocado add last for freshness
  • 1 can black beans rinsed if canned
  • 1 cup cherry tomatoes halved
  • 1/2 medium red onion or green onion
  • 1/4 cup cilantro optional
For the Creaminess
  • 1 cup cheddar cheese or vegan cheese for dairy-free
  • 1 cup Southwest dressing a mix of mayonnaise, sour cream, lime juice, and spices

Method
 

Step-by-Step Instructions
  1. Cook the pasta in salted boiling water for 8-10 minutes until al dente.
  2. Season chicken with olive oil, salt, pepper, and Southwest spices. Grill for 6-7 minutes per side.
  3. Prepare dressing by mixing mayonnaise, sour cream, lime juice, lime zest, and spices.
  4. In a bowl, combine cooled pasta, black beans, corn, bell peppers, onion, tomatoes, and sliced chicken.
  5. Pour dressing over salad and fold gently to combine.
  6. Fold in avocado, cheese, and cilantro gently.
  7. Cover and refrigerate for at least 1 hour before serving.
