Step-by-Step Instructions for Veggie-Loaded Mini Meatloaves
  1. Preheat your oven to 350°F (175°C) and grease a muffin tin thoroughly.
  2. Combine your choice of ground meat with onion, mushrooms, carrot, spinach, eggs, thyme, garlic, mustard, salt, and pepper in a mixing bowl.
  3. Using a 1/4 cup measuring cup, scoop out the meat mixture into the muffin tin, pressing down firmly.
  4. Bake in the preheated oven for 25 to 30 minutes until firm to the touch and juices run clear.
  5. Let cool for a few minutes, then carefully lift them from the muffin tin and serve warm with your favorite sides.
