- Preheat your oven to 375°F (190°C).
- Heat olive oil and butter in an oven-safe skillet over medium heat. Sauté diced onion for 3–4 minutes until translucent.
- Add minced garlic and sauté for 1 minute. Incorporate sliced cremini mushrooms and cook for 5–7 minutes until softened.
- Stir in Arborio rice and toast for 2-3 minutes without liquid. Deglaze the pan with white wine, scraping up brown bits.
- Gradually pour in warmed vegetable broth and add thyme. Bring to a gentle simmer.
- Cover and bake in the preheated oven for 25–30 minutes.
- Remove from oven and stir in butter and cheeses until melted. Return to oven for another 10–15 minutes.
- Allow to rest for 5 minutes before garnishing with fresh parsley and serving.
