Method
 

Cooking Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil and butter in an oven-safe skillet over medium heat. Sauté diced onion for 3–4 minutes until translucent.
  3. Add minced garlic and sauté for 1 minute. Incorporate sliced cremini mushrooms and cook for 5–7 minutes until softened.
  4. Stir in Arborio rice and toast for 2-3 minutes without liquid. Deglaze the pan with white wine, scraping up brown bits.
  5. Gradually pour in warmed vegetable broth and add thyme. Bring to a gentle simmer.
  6. Cover and bake in the preheated oven for 25–30 minutes.
  7. Remove from oven and stir in butter and cheeses until melted. Return to oven for another 10–15 minutes.
  8. Allow to rest for 5 minutes before garnishing with fresh parsley and serving.
