Step-by-Step Instructions
  1. Slice avocado in half, remove pit, and mash in a bowl. Add a pinch of salt, and set aside.
  2. Toast two slices of sourdough bread for 2-3 minutes until golden brown.
  3. Spread mashed avocado over one slice of toasted sourdough.
  4. On the second slice, spread a layer of Dijon mustard and drizzle honey.
  5. Layer turkey slices over the mustard-honey mixture, then sprinkle potato chips on top.
  6. Add slices of heirloom tomatoes and top with microgreens or lettuce.
  7. Assemble by placing the avocado slice on top, press down, and slice diagonally.
