For the Pasta
  • 2 cups Elbow Macaroni Cook until al dente
For the Meat Sauce
  • 1 lb Ground Beef Can substitute with turkey or sausage
  • 1 medium Onion Chopped
  • 1 medium Bell Pepper Chopped
  • 14.5 oz Diced Tomatoes
  • 2 cups Pasta Sauce
For the Cheese Sauce
  • 12 oz Evaporated Milk
  • 2 cups Cheddar Cheese Shredded
  • 1 cup Colby Jack Cheese Shredded
For Seasoning
  • 1 tsp Salt To taste
  • 1 tsp Pepper To taste
  • 2 tsp Italian Seasoning
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a rolling boil. Add the elbow macaroni and cook for 9-10 minutes, until al dente. Stir in a knob of butter until it melts, coating the macaroni.
  2. In a separate saucepan, warm the evaporated milk over medium heat. Gradually add shredded cheddar and Colby Jack cheeses, stirring until melted and creamy. Season with salt and pepper.
  3. In a skillet, heat oil over medium heat. Add ground beef and cook until browned. Mix in onions and bell peppers, sauté until softened. Stir in diced tomatoes and pasta sauce, simmer for 5 minutes.
  4. Preheat oven to 350°F. In a greased baking dish, layer macaroni, followed by meat sauce. Repeat layers, finishing with macaroni and sprinkle remaining cheese on top.
  5. Bake uncovered for 15 minutes, then broil for 2-3 minutes until top is crispy. Watch closely to avoid burning.
  6. Let the lasagna rest for 10 minutes before serving.
