Method
 

Step-by-Step Instructions
  1. Begin by patting your beef dry with paper towels; season all sides with salt and pepper.
  2. Heat olive oil in the Dutch oven over medium-high heat and sear the beef for about 3-4 minutes on each side.
  3. In the same pot, sauté chopped onions, carrots, and minced garlic for 2-3 minutes.
  4. Deglaze with a cup of red wine, scraping up browned bits for about 2 minutes.
  5. Return the seared beef and add enough beef broth to cover about one-third of the meat. Add fresh herbs.
  6. Cover the Dutch oven and braise in a preheated oven at 285°F (140°C) for 2.5 to 3 hours.
  7. Remove the pot from the oven and let the beef rest for about 10 minutes before slicing.
  8. Optionally, simmer the remaining sauce on the stove for 5-10 minutes to thicken.
