Ingredients
  

For the Meatloaf
  • 1 pound Ground Beef Use an 80/20 blend for optimal moisture.
  • 1 cup Panko Breadcrumbs Can substitute with regular breadcrumbs or crushed crackers.
  • ½ cup Whole Milk Can replace with any milk or plant-based milk for dairy-free option.
  • 1 large Egg Can use a flax egg for a vegan version.
  • ½ cup Parmesan Cheese Can swap with Pecorino Romano.
  • 1 cup Sharp Cheddar Cheese Can be swapped with mellow cheddar.
  • 1 cup Mozzarella Cheese Use low-moisture mozzarella to avoid excess liquid.
  • ½ medium Yellow Onion Can be replaced with finely diced shallots or leeks.
  • 2 cloves Garlic Fresh minced garlic provides the best taste.
  • 1 tablespoon Worcestershire Sauce Soy sauce can be an alternative.
  • 1 tablespoon Dijon Mustard Yellow mustard can also be used.
  • 1 teaspoon Dried Oregano Italian seasoning can be used instead.
  • 1 teaspoon Smoked Paprika Regular paprika can work in place of this.
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Black Pepper
For the Glaze
  • ½ cup Ketchup Opt for sugar-free or low-sugar if preferred.
  • 2 tablespoons Brown Sugar Can replace with honey or maple syrup.
  • 1 tablespoon Apple Cider Vinegar Substitute with white vinegar or lemon juice if needed.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). In a small bowl, mix together ½ cup ketchup, 2 tablespoons brown sugar, and 1 tablespoon apple cider vinegar to create the glaze.
  2. In a large bowl, combine 1 cup of Panko breadcrumbs with ½ cup of whole milk and let it stand for about 5 minutes.
  3. Add 1 pound of ground beef, 1 beaten egg, the three cheeses, ½ finely chopped onion, and 2 cloves of minced garlic to the breadcrumb mixture. Mix in Worcestershire sauce, Dijon mustard, oregano, smoked paprika, kosher salt, and black pepper.
  4. Transfer the mixture into a loaf pan, shaping it gently. Optionally place the pan on a wire rack.
  5. Bake for 40 minutes. When the top starts to brown, remove it from the oven and spread the glaze over the top.
  6. Return the meatloaf to the oven and bake for an additional 20-25 minutes until the internal temperature reaches 160°F (71°C).
  7. Let the meatloaf rest for 10-15 minutes after taking it out of the oven to redistribute the juices.
  8. Slice into thick pieces and serve warm.
