Preparation
- Preheat your oven to 375°F (190°C). In a small bowl, mix together ½ cup ketchup, 2 tablespoons brown sugar, and 1 tablespoon apple cider vinegar to create the glaze.
- In a large bowl, combine 1 cup of Panko breadcrumbs with ½ cup of whole milk and let it stand for about 5 minutes.
- Add 1 pound of ground beef, 1 beaten egg, the three cheeses, ½ finely chopped onion, and 2 cloves of minced garlic to the breadcrumb mixture. Mix in Worcestershire sauce, Dijon mustard, oregano, smoked paprika, kosher salt, and black pepper.
- Transfer the mixture into a loaf pan, shaping it gently. Optionally place the pan on a wire rack.
- Bake for 40 minutes. When the top starts to brown, remove it from the oven and spread the glaze over the top.
- Return the meatloaf to the oven and bake for an additional 20-25 minutes until the internal temperature reaches 160°F (71°C).
- Let the meatloaf rest for 10-15 minutes after taking it out of the oven to redistribute the juices.
- Slice into thick pieces and serve warm.
