Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Gather your equipment: cutting board, sharp knife, large bowl, and baking sheet lined with parchment paper.
  2. In a large bowl, toss diced sweet potatoes with olive oil, ground cumin, salt, and pepper until evenly coated.
  3. Spread the seasoned sweet potatoes in a single layer on the prepared baking sheet and roast for 25-30 minutes, stirring halfway through.
  4. While the sweet potatoes roast, mix the cooked quinoa, black beans, corn, and halved cherry tomatoes in a separate bowl.
  5. Once roasted and slightly cooled, add sweet potatoes to the quinoa mixture and gently fold them together.
  6. Top the bowl with sliced avocado and cilantro. For added flavor, squeeze a bit of lime juice if desired.
