Preparation Steps
- Cook the pasta in a large pot of salted water until al dente, approximately 8 to 10 minutes. Drain and rinse under cold water.
- Finely chop the red onion and halve the cherry tomatoes. Combine these veggies in a large mixing bowl.
- Once the pasta has cooled, add it to the mixing bowl. Crumble feta cheese over the top, and add cilantro if using.
- In a separate bowl, whisk together mayonnaise, sour cream, and lime juice until smooth. Add chili powder, garlic powder, and season with salt and pepper.
- Pour the dressing over the pasta and vegetable mixture. Toss gently until everything is evenly coated.
- Cover and chill in the refrigerator for at least 30 minutes before serving.
- Adjust seasoning before serving and enjoy chilled.
