- Preheat your oven to 425°F (220°C) and line two cookie sheets with parchment paper.
- In a large mixing bowl, whisk together the all-purpose baking mix and granulated sugar until combined.
- Add the half and half and melted butter to the dry mixture, stir until a soft dough forms.
- Gently fold in chopped strawberries and white chocolate chips, being careful not to overmix.
- Using a medium cookie scoop, drop tablespoons of the dough onto prepared cookie sheets, leaving space between.
- Optional: Sprinkle coarse raw cane sugar on top of each cookie before baking.
