Preparation Steps
- Preheat the oven to 400°F (200°C).
- Toss halved baby potatoes with 2 tablespoons of olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes.
- Pat the steak dry and season with salt and pepper. Heat 1 tablespoon of olive oil in a skillet over medium-high heat and sear steak for 3-4 minutes per side.
- Remove steak from skillet and let it rest for 5-10 minutes.
- In a medium bowl, whisk together remaining olive oil, balsamic vinegar, minced shallots, garlic, mustard, salt, and pepper.
- On a large platter, arrange mixed salad greens and sliced red onion. Slice resting steak thinly and layer on top.
- Drizzle dressing over salad and top with crumbled blue cheese. Serve immediately.
