Method
 

Preparation Steps
  1. Preheat the oven to 400°F (200°C).
  2. Toss halved baby potatoes with 2 tablespoons of olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes.
  3. Pat the steak dry and season with salt and pepper. Heat 1 tablespoon of olive oil in a skillet over medium-high heat and sear steak for 3-4 minutes per side.
  4. Remove steak from skillet and let it rest for 5-10 minutes.
  5. In a medium bowl, whisk together remaining olive oil, balsamic vinegar, minced shallots, garlic, mustard, salt, and pepper.
  6. On a large platter, arrange mixed salad greens and sliced red onion. Slice resting steak thinly and layer on top.
  7. Drizzle dressing over salad and top with crumbled blue cheese. Serve immediately.
