- In a medium bowl or jar, whisk together the lemon juice, olive oil, honey or maple syrup, and a pinch of salt and pepper until well emulsified and creamy. Set aside.
- Wash and dry the mixed greens thoroughly. Core and chop apples into bite-sized pieces just before serving. Toast cashews in a dry skillet over medium heat for 3-5 minutes.
- In a large mixing bowl, combine the dried mixed greens, chopped apples, and toasted cashews. If adding cheese, crumble it in and gently toss the salad.
- Drizzle the dressing over the salad just before serving. Toss using salad tongs or clean hands to ensure all ingredients are coated evenly.
