Step-by-Step Instructions for Turkey Sage Meatballs
  1. Preheat oven to 400°F (204°C) and combine ground turkey, panko breadcrumbs, egg, grated parmesan, minced garlic, fresh sage, salt, and black pepper in a large mixing bowl. Mix until just combined.
  2. Shape the mixture into 1.5 to 2 tablespoon-sized balls and place them on a lined baking sheet, ensuring space between each ball.
  3. Bake for 18 to 22 minutes until golden brown and cooked through, checking for an internal temperature of 165°F (74°C).
  4. While baking, heat skillet over medium heat and melt butter or olive oil. Sauté shallots for 5 minutes until tender, then add minced garlic and chopped kale. Cook for 5 to 7 minutes until kale is wilted.
  5. Add cooked orzo to the skillet, mixing well. Add reserved orzo cooking water if needed to create a cohesive sauce.
