  1. In a medium bowl, combine sweet chili sauce, soy sauce, rice vinegar, minced garlic, grated ginger, sesame oil, salt, and black pepper. Stir until well mixed, and then add chicken thighs, ensuring they are fully coated. Cover and refrigerate for at least 1 hour or overnight.
  2. Preheat your oven to 400°F (200°C) to cook the chicken evenly.
  3. Remove chicken from the refrigerator and place in a baking dish, skin side up. Pour any remaining marinade over the chicken.
  4. Bake the chicken for 25-30 minutes until the internal temperature reaches 165°F (74°C) and the skin is golden and crispy.
  5. For extra crispiness, broil the chicken for an additional 3-5 minutes.
  6. Remove from oven, rest for 5 minutes, and garnish with sesame seeds and chopped green onions.
