Method
 

Cooking Instructions
  1. Preheat your oven to 325°F (163°C).
  2. In a small bowl, mix together coarse kosher salt and coarsely ground pepper.
  3. Place the roast in the roasting pan and drizzle with olive oil, then cover with the salt and pepper mixture.
  4. Roast the beef uncovered for approximately 30 minutes per pound until internal temperature reaches 145°F (63°C).
  5. Remove from oven and let the roast rest for about 10 minutes.
  6. While beef rests, combine Greek yogurt, horseradish, red wine vinegar, Worcestershire sauce, salt, pepper, and chives in a bowl.
