  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Italian Seasoning Or substitute with cumin
  • 1 tablespoon Fresh Thyme Optional garnish

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Peel and slice the sweet potatoes into 1/4 inch thick rounds.
  3. In a large resealable plastic bag, add the sweet potato slices, olive oil, melted butter, minced garlic, grated Parmesan, salt, pepper, and Italian seasoning. Seal and shake until well-coated.
  4. Lightly grease a baking dish and arrange the seasoned sweet potato slices in it.
  5. Roast for 30-35 minutes until tender and golden brown.
  6. Let cool slightly, then garnish with additional Parmesan and thyme before serving.
