Preparation Steps
  1. Start by processing the red bell pepper, parsley, and garlic cloves in a food processor until you achieve a chunky paste.
  2. In a large mixing bowl, combine the chunky marinade with olive oil, lemon juice, dried oregano, thyme, smoked paprika, onion powder, salt, and black pepper.
  3. Add your lamb chops, ensuring they're fully coated with the marinade. Massage the ingredients into the meat for even flavor distribution, then cover and refrigerate for at least 1 hour.
  4. About 30 minutes before cooking, remove the marinated lamb chops from the refrigerator to let them come to room temperature.
  5. Preheat your oven to 400°F (200°C).
  6. Heat a cast-iron skillet over medium-high heat and drizzle olive oil. Sear the lamb chops for 1-2 minutes on each side.
  7. Transfer the lamb chops to the preheated oven. Bake for 8-12 minutes until the internal temperature reaches 130°F for medium-rare.
  8. Remove the lamb chops from the oven and let them rest for 3-5 minutes before serving.
