Preparation Steps
- Start by processing the red bell pepper, parsley, and garlic cloves in a food processor until you achieve a chunky paste.
- In a large mixing bowl, combine the chunky marinade with olive oil, lemon juice, dried oregano, thyme, smoked paprika, onion powder, salt, and black pepper.
- Add your lamb chops, ensuring they're fully coated with the marinade. Massage the ingredients into the meat for even flavor distribution, then cover and refrigerate for at least 1 hour.
- About 30 minutes before cooking, remove the marinated lamb chops from the refrigerator to let them come to room temperature.
- Preheat your oven to 400°F (200°C).
- Heat a cast-iron skillet over medium-high heat and drizzle olive oil. Sear the lamb chops for 1-2 minutes on each side.
- Transfer the lamb chops to the preheated oven. Bake for 8-12 minutes until the internal temperature reaches 130°F for medium-rare.
- Remove the lamb chops from the oven and let them rest for 3-5 minutes before serving.
