Cooking Instructions
  1. Pat the lamb loin chops dry and season with salt, pepper, minced garlic, and thyme. Let sit for 15 minutes.
  2. Heat olive oil in a skillet over medium-high heat. Sear lamb chops for 3-4 minutes on each side until golden and internal temp is 130-135°F.
  3. Transfer lamb to a plate, cover with foil, and let rest for 5 minutes.
  4. In the same skillet, add chicken broth to deglaze and scrape the brown bits. Stir in mustard, cream, thyme, and Worcestershire sauce. Simmer for 3-4 minutes until thickened.
  5. Return rested lamb to the skillet, spoon sauce over, garnish with thyme, and serve immediately.
