Step-by-Step Instructions for Korean BBQ Meatballs
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine 1 pound of ground beef, 2 minced garlic cloves, 1/2 inch grated ginger, and 2 finely chopped green onions. Add in 1 beaten egg, 1/4 cup breadcrumbs, 2 tablespoons soy sauce, 1 tablespoon sesame oil, 1 tablespoon gochujang, 1 tablespoon brown sugar, 1 teaspoon rice vinegar, salt, and black pepper to taste. Mix everything until well incorporated.
  3. Using your hands, scoop out portions of the mixture and roll them into 1-inch meatballs, placing them on the prepared baking sheet.
  4. Transfer the baking sheet to the oven and bake the meatballs for 18-20 minutes, until golden brown and cooked through.
  5. While the meatballs are baking, prepare the spicy mayo dip by whisking together 1/2 cup mayonnaise, 1 tablespoon gochujang, 1 teaspoon lime juice, and 1/2 teaspoon honey in a small bowl.
