Ingredients

For the Beef
  • 1 pound Ground Beef Opt for 93% lean for best flavor and nutrition, or try ground turkey as a substitute.
For the Sweet Potatoes
  • 2 large Sweet Potatoes You can swap them for cauliflower to make a low-carb version.
For the Creaminess
  • 1 cup Cottage Cheese Use plant-based yogurt or cashew cheese for a dairy-free option.
For Healthy Fats
  • 1 medium Avocado Slice it fresh to avoid browning.
For the Sweet Heat
  • 1 tablespoon Hot Honey Try sugar-free hot honey for a lighter version.
For the Spice
  • 2 tablespoons Spices (Taco Seasoning) Use homemade blends for a personal touch.
Optional Toppings
  • 1 teaspoon Crushed Red Pepper Sprinkle this for an extra kick of heat.
  • 2 tablespoons Chopped Scallions These can brighten up the dish both in flavor and appearance.

Equipment

  • oven
  • large skillet
  • Mixing bowl
  • Baking Sheet

Method

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C). Peel and cube the sweet potatoes into bite-sized pieces, then toss them in a mixing bowl with olive oil, salt, and any preferred seasonings. Spread the sweet potato cubes evenly on a baking sheet and roast for 30–35 minutes, or until they are tender and caramelized, stirring halfway through.
  2. While the sweet potatoes are roasting, heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a wooden spoon, until browned and fully cooked—about 5–7 minutes. Stir in taco seasoning to coat the beef evenly.
  3. Once the sweet potatoes and beef are ready, start by placing a generous layer of roasted sweet potatoes at the bottom of each serving bowl. Top them with the seasoned ground beef, then add a spoonful of cottage cheese for creaminess.
  4. Slice the avocado and arrange it attractively on top of the beef and cottage cheese. Drizzle hot honey over the entire bowl.
  5. Enhance your bowls with optional toppings such as crushed red pepper or freshly chopped scallions. Serve immediately.
