Cooking Steps
- Grease the crockpot insert with non-stick spray.
- Place the cubed chicken breasts evenly at the bottom of the crockpot.
- Sprinkle the diced onion and minced garlic over the chicken.
- Whisk together soy sauce, sesame oil, and oyster sauce and pour over the chicken.
- Spread the frozen mixed vegetables evenly on top.
- Cover the crockpot and set it to cook on low for 4 hours or high for 2 hours.
- Stir in the cold cooked rice after cooking time is completed.
- Create a well in the rice mixture and pour in the lightly beaten eggs, allowing to set for 3-5 minutes.
- Stir the eggs into the rice mixture.
- Season with salt, pepper, and optional chili flakes.
- Replace the lid and cook on high for an additional 15-20 minutes.
- Garnish with freshly sliced green onions before serving.
