  • 2 pounds Boneless, Skinless Chicken Breasts Cut into cubes for even cooking
For the Rice Base
  • 4 cups Cooked White Rice Must be cold to prevent mushiness
For the Vegetables
  • 2 cups Frozen Mixed Vegetables Ideal for convenience
For Flavoring
  • 1 medium Onion Diced finely
  • 3 cloves Garlic Minced
  • 1/4 cup Soy Sauce Opt for low-sodium
  • 2 tablespoons Sesame Oil Can substitute with vegetable oil
  • 2 tablespoons Oyster Sauce
For Enrichment
  • 2 large Eggs Lightly beaten
  • 1 teaspoon Salt Adjust according to taste
  • 1 teaspoon Pepper Adjust according to taste
For Garnish
  • 2 stalks Green Onions Sliced

Method
 

Cooking Steps
  1. Grease the crockpot insert with non-stick spray.
  2. Place the cubed chicken breasts evenly at the bottom of the crockpot.
  3. Sprinkle the diced onion and minced garlic over the chicken.
  4. Whisk together soy sauce, sesame oil, and oyster sauce and pour over the chicken.
  5. Spread the frozen mixed vegetables evenly on top.
  6. Cover the crockpot and set it to cook on low for 4 hours or high for 2 hours.
  7. Stir in the cold cooked rice after cooking time is completed.
  8. Create a well in the rice mixture and pour in the lightly beaten eggs, allowing to set for 3-5 minutes.
  9. Stir the eggs into the rice mixture.
  10. Season with salt, pepper, and optional chili flakes.
  11. Replace the lid and cook on high for an additional 15-20 minutes.
  12. Garnish with freshly sliced green onions before serving.
