Ingredients
  

For the Chicken Marinade
  • 1 pound Boneless Skinless Chicken Thighs or Breasts Thighs are juicier, breasts are leaner.
  • 3 cloves Garlic Minced for flavor.
  • 1 tablespoon Fresh Ginger Grated.
  • 1 teaspoon Turmeric Powder
  • 1 teaspoon Ground Coriander
  • 3 tablespoons Soy Sauce or Fish Sauce Choose soy for a general option.
  • 1 tablespoon Brown Sugar
  • 1 stalk Lemongrass Fresh or paste.
  • 1/2 cup Coconut Milk
For the Thai Peanut Sauce
  • 1/2 cup Creamy Peanut Butter Heart of the sauce.
  • 1 tablespoon Red Curry Paste For complex flavors.
  • 2 tablespoons Lime Juice Fresh.
  • 1 tablespoon Sugar or Honey To balance the sauce.
  • 1/4 cup Water For achieving desired consistency.
  • Chili Flakes or Sriracha Optional, adjust heat to taste.

Method
 

Steps
  1. In a medium bowl, whisk together minced garlic, grated ginger, turmeric, ground coriander, soy sauce, brown sugar, lemongrass, and coconut milk until well combined.
  2. Cut your chicken into thin strips and coat thoroughly in the marinade. Cover and refrigerate for at least 1 hour, preferably overnight.
  3. Soak wooden skewers in water for about 30 minutes before grilling to prevent burning.
  4. Heat peanut butter, red curry paste, lime juice, soy sauce, and sugar/honey in a saucepan over low heat. Stir in water to achieve the desired consistency.
  5. Thread marinated chicken strips onto soaked skewers.
  6. Preheat grill and cook chicken skewers for 3–4 minutes on each side or until cooked through.
  7. Serve the skewers hot with Easy Thai Peanut Sauce on the side for dipping.
