Preparation Steps
- In a mixing bowl, whisk together ½ cup bourbon, ¼ cup soy sauce, ¼ cup brown sugar, 2 tablespoons ketchup, 2 tablespoons apple cider vinegar, 4 minced garlic cloves, and 1 tablespoon minced ginger until well combined.
- Place 1.5 pounds of thinly sliced chicken breast into the marinade, cover, and let it marinate in the refrigerator for at least 30 minutes.
- Preheat your Blackstone griddle over medium-high heat for about 5 minutes and add 1-2 tablespoons of vegetable oil.
- Add 1 diced onion and 1-2 diced bell peppers to the griddle, sauté for 3-4 minutes until softened.
- Move the sautéed vegetables to one side and add the marinated chicken to the other side, cooking for 5-7 minutes until fully cooked.
- Mix the chicken with the sautéed vegetables and allow everything to simmer together for an additional 2-3 minutes.
- Before serving, season with salt and pepper to taste and garnish with sliced green onions.
