Step-by-Step Instructions
  1. In a large pot, heat olive oil over medium-high heat. Add the beef chuck in batches, searing for 5-7 minutes until browned. Set aside.
  2. Add more olive oil if needed, then sauté onions and garlic for about 5 minutes until soft and golden.
  3. Pour in red wine, scraping up brown bits. Let it simmer for 3-4 minutes to build flavor.
  4. Stir in crushed tomatoes, cinnamon stick, bay leaves, and oregano. Simmer for 1 minute.
  5. Return beef to pot with its juices, add red wine vinegar and honey. Cover and simmer on low for 1.5 to 2 hours.
  6. Adjust seasoning with salt and pepper. Remove cinnamon stick and bay leaves.
  7. Ladle stew into bowls, garnish with parsley, and serve with crusty bread, rice, or mashed potatoes.
