Step‑by‑Step Instructions
  1. In a large skillet over medium heat, add the ground beef and cook until well-browned, about 5-7 minutes. Drain any excess grease.
  2. Transfer the cooked ground beef to your slow cooker. Add in the matchstick carrots, sliced red bell pepper, and chopped scallions. Stir gently.
  3. In a mixing bowl, whisk together the minced garlic, soy sauce, brown sugar, and stock until smooth and combined.
  4. Pour the sauce over the beef and vegetable mixture in the slow cooker. Cover and cook on LOW for 4-6 hours.
  5. About 30 minutes before serving, break the dry ramen noodles into quarters and add them to the slow cooker. Stir gently.
