Cooking Instructions
  1. Start by patting the beef brisket dry with paper towels. Season with kosher salt, black pepper, dried thyme, and ground paprika. Allow to sit for 1 hour.
  2. Preheat your oven to 350°F (177°C).
  3. In a large roasting pan, heat vegetable oil over medium-high heat. Sear the brisket for 4-5 minutes on each side until browned. Remove and set aside.
  4. In the same pan, add sliced onions with a pinch of salt and sauté for about 10 minutes until golden. Stir in tomato paste and cook for an additional minute.
  5. Scatter garlic and halved carrots around the onions. Place seared brisket on top, then cover with foil or a lid.
  6. Transfer to the oven and braise for 1.5 hours at 350°F (177°C).
  7. After 1.5 hours, reduce oven temperature to 325°F (163°C), remove the cover, and baste the brisket with juices. Continue cooking for 2 more hours.
  8. Once tender, remove from oven and let rest for 20 minutes before slicing. Skim excess fat from the liquid before serving.
