Cooking Instructions
- Start by patting the beef brisket dry with paper towels. Season with kosher salt, black pepper, dried thyme, and ground paprika. Allow to sit for 1 hour.
- Preheat your oven to 350°F (177°C).
- In a large roasting pan, heat vegetable oil over medium-high heat. Sear the brisket for 4-5 minutes on each side until browned. Remove and set aside.
- In the same pan, add sliced onions with a pinch of salt and sauté for about 10 minutes until golden. Stir in tomato paste and cook for an additional minute.
- Scatter garlic and halved carrots around the onions. Place seared brisket on top, then cover with foil or a lid.
- Transfer to the oven and braise for 1.5 hours at 350°F (177°C).
- After 1.5 hours, reduce oven temperature to 325°F (163°C), remove the cover, and baste the brisket with juices. Continue cooking for 2 more hours.
- Once tender, remove from oven and let rest for 20 minutes before slicing. Skim excess fat from the liquid before serving.
