  • 2 tablespoons Ground Flaxseed Can substitute with chia seeds.
  • 1 cup Natural/Greek Yogurt Opt for plant-based yogurt for a dairy-free version.
  • 1 pinch Salt Enhances flavor.
  • 1 cup Milk of Choice Soya or oat milk recommended.
For the Sweetness
  • 2 tablespoons Maple Syrup Optional, agave syrup can be used.
For the Fruity Layer
  • 1 cup Fresh Raspberries Frozen raspberries can be used.
For the Luscious Topping
  • 3 tablespoons Lotus Biscoff Spread Any cookie spread can substitute.
  • 1 tablespoon Coconut Oil Can be omitted.
  • 1 piece Biscoff Biscuit For crumbling on top, can replace with any crunchy cookie.

Method
 

Base Preparation
  1. In a medium bowl, mix rolled oats, ground flaxseed, natural yogurt, a pinch of salt, and milk. Cover and refrigerate for at least 3 hours or overnight.
Fruity Layer
  1. Mash fresh raspberries in a separate bowl until smooth.
Topping Preparation
  1. Combine Lotus Biscoff spread and coconut oil in a bowl. Microwave for 20 seconds and stir until smooth.
Layering
  1. Layer oats, mashed raspberries, and then drizzle Biscoff mixture over the top.
Crumble and Chill
  1. Crumble a Biscoff biscuit on top and chill for 15-30 minutes before serving.
