  • 2 tablespoons Fish Sauce Adjust to taste.
  • 1 tablespoon Dark Soy Sauce Consider kicap manis as a substitute.
  • 1 tablespoon Brown Sugar Palm sugar can be a good alternative.
For Assembly
  • 8 leaves Lettuce Leaves Wash and dry thoroughly.
  • 2 pieces Chili Peppers Mix red and green for visual appeal.
  • 1/4 cup Grated Peanuts For garnish.
  • 1/4 cup Coriander/Spring Onions Omit coriander if not a fan.
  • 1 lime Lime Juice Save zest for other dishes.
Optional Garnishes
  • 1 tablespoon Sesame Seeds Sprinkle before serving.
  • 2 tablespoons Sweet Chili Sauce For drizzling.

Method
 

Step-by-Step Instructions
  1. In a bowl, mix the chicken mince with half of the lemongrass, minced garlic, fish sauce, and dark soy sauce. Cover and marinate for 30 minutes.
  2. Wash the lettuce leaves thoroughly and dry them with a clean towel or salad spinner.
  3. Warm 1-2 tablespoons of vegetable oil in a large non-stick skillet over medium-high heat for about 2 minutes.
  4. Add the remaining lemongrass and minced garlic to the hot oil, stirring for 1-2 minutes until fragrant.
  5. Cook the marinated chicken in the skillet for 5-7 minutes until browned and cooked through.
  6. If desired, stir in a cornstarch slurry for a thicker sauce, and cook for 2 minutes.
  7. Assemble the wraps by scooping chicken filling into each lettuce leaf and garnishing with chili peppers, peanuts, and herbs. Serve warm.
