  • 2 tbsp Brown Sugar Coconut sugar can be used.
  • 2 cloves Garlic Minced; fresh is better.
  • 1 tbsp Ginger Grated; fresh is recommended.
For the Vegetables
  • 1 cup Cucumbers Sliced; swap for your favorite salad veggie.
  • 1 cup Carrots Shredded for sweetness and color.
  • 2 cups Spinach Sauté briefly for best results.
For the Base
  • 2 cups Rice White, brown, or cauliflower rice works.

Method
 

Preparation Instructions
  1. Start cooking your rice according to package instructions.
  2. In a large skillet over medium-high heat, add ground beef and cook for about 5-7 minutes until deep brown.
  3. Reduce heat to medium, add soy sauce, brown sugar, garlic, and ginger, and cook for an additional 2 minutes.
  4. While beef simmers, slice cucumbers, shred carrots, and sauté spinach until wilted, about 2-3 minutes.
  5. Assemble bowls by spooning the beef mixture over rice, then top with cucumbers, carrots, and spinach.
  6. (Optional) Garnish with sesame seeds or chopped green onions.
