  • 1 cup Caster Sugar Fine sugar
  • 1 teaspoon Vanilla Extract Pure

  • 2 tablespoons Cornflour Essential for a crisp finish
For the Filling and Topping
  • 1 cup Thickened Cream Whipped to soft peaks
  • 2 cups Sliced Strawberries Fresh
  • 1 cup Passionfruit Pulp Fresh
  • 1 tablespoon Icing Sugar For dusting

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 120°C fan-forced (or 140°C conventional).
  2. Prepare baking paper by drawing a Christmas tree outline.
  3. Melt the white chocolate for stars and let them set.
  4. Whip egg whites and cream of tartar until soft peaks form.
  5. Gradually add caster sugar until stiff peaks form, then fold in the other ingredients.
  6. Pipe the meringue onto the baking paper following the outline.
  7. Bake for 1 hour until cooked, then leave to cool in the oven for 2 hours.
  8. Assemble by filling the meringue with whipped cream, strawberries, and passionfruit.
  9. Decorate with chocolate stars and icing sugar just before serving.
