  • 8 ounces Rotini or Penne Pasta Whole-grain recommended for added fiber
For the Vegetables
  • 1 cup Cherry Tomatoes Any small tomato variety can be used
  • 1 cup Cucumber Zucchini or bell pepper can also be used
  • 1/2 cup Red Onion Substitute with green onions for a milder flavor
  • 1 cup Bell Pepper Any color
  • 1/2 cup Black Olives Green olives can be used as an alternative
For the Cheese
  • 1 cup Shredded Cheddar Cheese Feta or mozzarella are great alternatives
For the Dressing
  • 1/2 cup Italian Dressing Homemade versions also work well
For Seasoning and Garnish
  • to taste Salt
  • to taste Black Pepper
  • 1/4 cup Fresh Parsley (optional) Fresh basil is also a good alternative

Method
 

Step-By-Step Instructions
  1. Cook the pasta in a large pot of salted water according to package directions until al dente, usually around 8-10 minutes. Drain and rinse under cold water.
  2. While the pasta cools, wash and chop the cherry tomatoes, cucumber, red onion, and bell pepper into bite-sized pieces. If using olives, slice them in half.
  3. Once the pasta is cooled, add it to a large mixing bowl with the fresh vegetables and gently mix.
  4. Drizzle the Italian dressing over the mixture and toss everything until well-coated.
  5. Season with salt and pepper according to preference. Optionally mix in or sprinkle fresh parsley on top.
  6. Cover and chill in the refrigerator for at least 1 hour before serving.
