- Melt butter in a large saucepan over medium heat. Add diced onion and celery, sauté for about 5 minutes until translucent.
- Fold in fresh oysters along with their liquor, then pour in milk and simmer gently for 5-7 minutes.

- Ladle into warmed bowls and garnish with parsley.
