  • 1 cup Yellow Onion, diced Shallots can be used for a milder flavor.
  • 1 cup Celery, diced
  • 2 cups Fresh Oysters Use with their liquor for best flavor.
  • 2 cups Milk For a richer version, use half-and-half.
  • 1 cup Heavy Cream Optional for extra creaminess.
  • Salt Seasonings To taste.
  • Pepper Seasonings To taste.
For the Garnish
  • 1 tablespoon Parsley, chopped Chives or dill can be used as alternatives.

Method
 

Directions
  1. Melt butter in a large saucepan over medium heat. Add diced onion and celery, sauté for about 5 minutes until translucent.
  2. Fold in fresh oysters along with their liquor, then pour in milk and simmer gently for 5-7 minutes.
  3. If desired, stir in heavy cream and adjust seasonings with salt and pepper.
  4. Ladle into warmed bowls and garnish with parsley.

Notes
