Preparation Steps
- Preheat your oven to 350°F (175°C).
- Grease your bundt pan generously with neutral oil or melted butter and dust with flour.
- Mash 3–4 ripe bananas in a large mixing bowl and add 2 large eggs and ½ cup of neutral oil.
- In a separate bowl, whisk together 2 cups of flour, 1 cup of sugar, 3.5 oz pudding mix, 1 tsp baking soda, and kosher salt.
- Gradually fold dry ingredients into the wet mixture until just combined.
- Fold in 3.5 oz of dark chocolate chunks and 1 cup of shredded coconut.
- Transfer the batter into the prepared bundt pan, filling it about 3/4 full.
- Bake in the preheated oven for 60-75 minutes.
- Let the bread cool in the pan for 10-15 minutes before inverting onto a wire rack.
