  • 1 cup Canned Corn Optional
  • 2 tbsp Taco Seasoning Store-bought or homemade
  • 1 cup Shredded Cheese (Cheddar or Pepper Jack) Divided for mixing and topping
For Topping (Optional)
  • 1/2 cup Red Taco Sauce Mild or medium
  • 1/4 cup Cilantro or Parsley Optional for garnish

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Gather your ingredients.
  2. In a large mixing bowl, combine the ground beef, crushed corn tortilla chips, finely diced yellow onion, diced green bell pepper, whisked eggs, Rotel tomatoes, canned corn, taco seasoning, and 1 cup of shredded cheese. Mix gently.
  3. Transfer the meat mixture into a 9x5-inch loaf pan and shape it into a loaf.
  4. Place the loaf pan in the oven and bake for 50 minutes, until the edges are brown and the top is firm.
  5. If using taco sauce, spread it over the meatloaf, add remaining cheese, and return to the oven for an additional 10-15 minutes.
  6. Once done, let the meatloaf rest for 10 minutes before slicing and serving.
