- Preheat your oven to 350°F (175°C). Gather your ingredients.
- In a large mixing bowl, combine the ground beef, crushed corn tortilla chips, finely diced yellow onion, diced green bell pepper, whisked eggs, Rotel tomatoes, canned corn, taco seasoning, and 1 cup of shredded cheese. Mix gently.
- Transfer the meat mixture into a 9x5-inch loaf pan and shape it into a loaf.
- Place the loaf pan in the oven and bake for 50 minutes, until the edges are brown and the top is firm.
- If using taco sauce, spread it over the meatloaf, add remaining cheese, and return to the oven for an additional 10-15 minutes.
- Once done, let the meatloaf rest for 10 minutes before slicing and serving.
