Step-by-Step Instructions
  1. Preheat a skillet over medium heat, then butter one side of a slice of sourdough bread. Grill until light brown, about 2-3 minutes.
  2. Flip the bread, butter the top side, and grill again for 2-3 minutes until golden.
  3. Spread a generous layer of basil pesto on the grilled side of the bread.
  4. Layer mozzarella slices over the pesto, followed by thin slices of ripe tomatoes.
  5. Place a second slice of buttered sourdough on top and gently press down.
  6. Reduce heat to low, place the sandwich back in the skillet, cover, and cook for 4-5 minutes until cheese is melted.
  7. Remove from skillet, slice in half, garnish with fresh basil or balsamic glaze, and serve immediately.
