- Preheat a skillet over medium heat, then butter one side of a slice of sourdough bread. Grill until light brown, about 2-3 minutes.
- Flip the bread, butter the top side, and grill again for 2-3 minutes until golden.
- Spread a generous layer of basil pesto on the grilled side of the bread.
- Layer mozzarella slices over the pesto, followed by thin slices of ripe tomatoes.
- Place a second slice of buttered sourdough on top and gently press down.
- Reduce heat to low, place the sandwich back in the skillet, cover, and cook for 4-5 minutes until cheese is melted.
- Remove from skillet, slice in half, garnish with fresh basil or balsamic glaze, and serve immediately.
