  • 2 pieces Cucumbers Diced
  • 3 pieces Tomatoes Cut into bite-sized pieces
  • 0.5 pieces Red Onion Finely chopped
Dressing
  • 0.25 cup Olive Oil Extra virgin recommended
  • 1 tablespoon Lemon Juice Juice of one lemon
  • to taste Salt
  • to taste Pepper
  • optional Dried Oregano For extra flavor
Fresh Herbs
  • 1 handful Fresh Parsley Roughly chopped
  • 1 handful Fresh Mint Roughly chopped

Method
 

Preparation
  1. Dice the cucumbers, cut tomatoes into bite-sized pieces, and finely chop the red onion.
  2. Roughly chop fresh parsley and mint and combine with the vegetables in a large mixing bowl.
  3. Whisk together lemon juice, olive oil, salt, and pepper in a separate small bowl.
  4. Pour the dressing over the salad mixture and toss carefully to coat.
  5. Taste and adjust seasoning, then let the salad rest for about 10 minutes before serving.
