- Preheat your oven to 400°F (200°C). Wash and pierce each russet potato with a fork.

- Combine the seafood with potato filling, spoon back into potato skins, and top with cheese sauce.
- Broil in the oven for 3-5 minutes until bubbly and golden brown, then garnish with chopped chives and serve hot.
