Step-by-Step Instructions
- Combine the oats, chia seeds, stevia powder, and shredded coconut in a mixing bowl. Pour in the skim milk and mix in the yogurt until creamy. Gently fold in the raspberries.
- Spread 1 tablespoon of lemon curd evenly at the bottom of a clean jar.
- Pour half of the overnight oats mixture over the lemon curd layer, spreading it evenly.
- Add another tablespoon of lemon curd on top of the first layer of oats.
- Layer the remaining oats mixture on top of the second lemon curd layer, smoothing the surface.
- Refrigerate the jar for at least 4 hours, preferably overnight.
- When ready to serve, take the jar out of the fridge and enjoy it as is or in a bowl, optionally topped with fresh raspberries or nuts.
