Ingredients
  

For the Base
  • 1 cup Oats gluten-free oats can be used if needed
  • 2 tablespoons Chia Seeds can be omitted if desired
  • 1 tablespoon Stevia Powder honey or maple syrup make excellent substitutes
For the Creamy Mixture
  • 1/3 cup Shredded Coconut can be replaced with more oats or omitted if not a coconut fan
  • 1 cup Skim Milk substitute with any plant-based milk for a non-dairy alternative
  • 1/2 cup Fat-Free Sugar-Free Yogurt regular yogurt is a great option if you prefer it
For the Flavor Burst
  • 1 cup Raspberries try replacing them with blueberries or strawberries if desired
  • 2 tablespoons Lemon Curd if unavailable, lemon juice mixed with a sweetener works well as a substitute

Method
 

Step-by-Step Instructions
  1. Combine the oats, chia seeds, stevia powder, and shredded coconut in a mixing bowl. Pour in the skim milk and mix in the yogurt until creamy. Gently fold in the raspberries.
  2. Spread 1 tablespoon of lemon curd evenly at the bottom of a clean jar.
  3. Pour half of the overnight oats mixture over the lemon curd layer, spreading it evenly.
  4. Add another tablespoon of lemon curd on top of the first layer of oats.
  5. Layer the remaining oats mixture on top of the second lemon curd layer, smoothing the surface.
  6. Refrigerate the jar for at least 4 hours, preferably overnight.
  7. When ready to serve, take the jar out of the fridge and enjoy it as is or in a bowl, optionally topped with fresh raspberries or nuts.
