Step-by-Step Instructions
  1. In a large mixing bowl, combine 2 cups of rolled oats, 1 cup of natural peanut butter, ½ cup of maple syrup (or honey), and ¼ cup of melted coconut oil. Add the zest of 1 lemon, the juice of that same lemon, 1 teaspoon of vanilla extract, and a pinch of salt. Stir vigorously for about 3–4 minutes, or until everything is thoroughly blended and the mixture is sticky yet cohesive.
  2. Once your mixture is well-combined, use your hands to scoop out a portion about the size of a golf ball. Roll it into a ball and then flatten it slightly to form a cookie shape. Repeat this process until all the mixture has been shaped into cookies. You should have around 12-15 cookies.
  3. Place the formed cookies on a lined baking sheet or a plate, making sure they’re spaced apart. Refrigerate for at least 30 minutes, allowing the cookies to firm up nicely.
  4. After chilling, your cookies are ready to enjoy! Serve them chilled for a refreshing treat at any time of day.
