- In a large mixing bowl, combine 2 cups of rolled oats, 1 cup of natural peanut butter, ½ cup of maple syrup (or honey), and ¼ cup of melted coconut oil. Add the zest of 1 lemon, the juice of that same lemon, 1 teaspoon of vanilla extract, and a pinch of salt. Stir vigorously for about 3–4 minutes, or until everything is thoroughly blended and the mixture is sticky yet cohesive.
- Once your mixture is well-combined, use your hands to scoop out a portion about the size of a golf ball. Roll it into a ball and then flatten it slightly to form a cookie shape. Repeat this process until all the mixture has been shaped into cookies. You should have around 12-15 cookies.
- Place the formed cookies on a lined baking sheet or a plate, making sure they’re spaced apart. Refrigerate for at least 30 minutes, allowing the cookies to firm up nicely.
- After chilling, your cookies are ready to enjoy! Serve them chilled for a refreshing treat at any time of day.
