- Start by taking your boneless skinless chicken thighs out of the refrigerator, letting them sit at room temperature for about 20 minutes.
- Generously sprinkle kosher salt over both sides of the chicken thighs, and follow with black pepper, garlic powder, smoked paprika, and onion powder. Rub the seasonings into the meat.
- Preheat your oven to 400°F (200°C) and position the oven rack in the center.
- Take a baking sheet and brush it with 1 tablespoon of olive oil.
- Carefully place the seasoned chicken thighs on the oiled baking sheet, and drizzle any remaining olive oil over the tops.
- Slide the baking sheet into the preheated oven and bake the chicken thighs for 18 minutes, then flip and continue baking for another 14 minutes.
- Remove from the oven and tent with aluminum foil. Allow to rest for about 3 minutes.
