Method
 

Steps
  1. Preheat the oven to 350°F (175°C) and grease a 9" x 5" loaf pan.
  2. In a medium bowl, whisk together flour, cinnamon, baking powder, baking soda, and salt.
  3. In a large mixing bowl, beat together softened butter, brown sugar, and peanut butter until light and fluffy.
  4. Add eggs one at a time, mixing well, then blend in the vanilla extract.
  5. Gradually mix in the dry ingredients alternately with sour cream.
  6. Fold in the mashed bananas, and optionally add nuts or chocolate chips.
  7. Transfer the batter to the loaf pan and fill it evenly.
  8. Bake for 50-55 minutes or until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
