Steps
- Preheat the oven to 350°F (175°C) and grease a 9" x 5" loaf pan.
- In a medium bowl, whisk together flour, cinnamon, baking powder, baking soda, and salt.
- In a large mixing bowl, beat together softened butter, brown sugar, and peanut butter until light and fluffy.
- Add eggs one at a time, mixing well, then blend in the vanilla extract.
- Gradually mix in the dry ingredients alternately with sour cream.
- Fold in the mashed bananas, and optionally add nuts or chocolate chips.
- Transfer the batter to the loaf pan and fill it evenly.
- Bake for 50-55 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
