Muffin Instructions
- Preheat oven to 350°F (175°C). Gather equipment: mixing bowl, whisk, spatula, muffin tin.
- In a large bowl, whisk together all-purpose flour, whole wheat flour, baking soda, salt, nutmeg, and cinnamon.
- In a separate bowl, melt the butter until warm but not bubbling. Mash bananas, then stir in butter, sugars, milk, egg, and vanilla until combined.
- Pour banana mixture into dry ingredients. Mix gently until just combined; avoid overmixing.
- Fold half the chopped walnuts into the batter, reserving the rest to top the muffins.
- Spoon batter into greased or lined muffin cups, filling two-thirds full.
- Sprinkle remaining walnuts on top. Bake for 22-26 minutes until golden brown and a toothpick comes out clean.
- Cool muffins in the pan for 5 minutes, then transfer to a wire rack.
