Method
 

Muffin Instructions
  1. Preheat oven to 350°F (175°C). Gather equipment: mixing bowl, whisk, spatula, muffin tin.
  2. In a large bowl, whisk together all-purpose flour, whole wheat flour, baking soda, salt, nutmeg, and cinnamon.
  3. In a separate bowl, melt the butter until warm but not bubbling. Mash bananas, then stir in butter, sugars, milk, egg, and vanilla until combined.
  4. Pour banana mixture into dry ingredients. Mix gently until just combined; avoid overmixing.
  5. Fold half the chopped walnuts into the batter, reserving the rest to top the muffins.
  6. Spoon batter into greased or lined muffin cups, filling two-thirds full.
  7. Sprinkle remaining walnuts on top. Bake for 22-26 minutes until golden brown and a toothpick comes out clean.
  8. Cool muffins in the pan for 5 minutes, then transfer to a wire rack.
