Step-by-Step Instructions
  1. In a large mixing bowl, combine all-purpose flour and salt. Cut in cold butter until it resembles coarse crumbs. Gradually add ice water until dough holds together. Refrigerate for at least 1 hour.
  2. Peel and cube the sweet potatoes. Boil in water for about 12-15 minutes until tender. Drain, mash, and set aside.
  3. In another bowl, cream together room-temperature butter and sugar. Add eggs, evaporated milk, orange zest, vanilla, spices, and salt. Mix until smooth.
  4. Fold in the mashed sweet potatoes until fully incorporated.
  5. Preheat oven to 425°F. Pour the filling into the chilled crust. Bake for 15 minutes, then reduce temperature to 350°F and bake for 35-40 minutes.
  6. The pie is done when the filling is set and a knife inserted comes out clean. Cool completely before serving.
