- In a large mixing bowl, combine all-purpose flour and salt. Cut in cold butter until it resembles coarse crumbs. Gradually add ice water until dough holds together. Refrigerate for at least 1 hour.
- Peel and cube the sweet potatoes. Boil in water for about 12-15 minutes until tender. Drain, mash, and set aside.
- In another bowl, cream together room-temperature butter and sugar. Add eggs, evaporated milk, orange zest, vanilla, spices, and salt. Mix until smooth.
- Fold in the mashed sweet potatoes until fully incorporated.
- Preheat oven to 425°F. Pour the filling into the chilled crust. Bake for 15 minutes, then reduce temperature to 350°F and bake for 35-40 minutes.
- The pie is done when the filling is set and a knife inserted comes out clean. Cool completely before serving.
