  • 1 pound Large Shrimp peeled and deveined
  • 1 cup Bread Crumbs preferably panko
  • 4 tablespoons Butter for sautéing
  • 1 medium Onion finely chopped
  • 1 medium Green Bell Pepper finely chopped
  • 2 cloves Garlic minced
  • 1 teaspoon Dried Oregano
  • 1/2 cup Parmesan Cheese grated
  • 1/4 cup Fresh Parsley chopped
  • 1 tablespoon Lemon Juice
  • to taste Salt
  • to taste Pepper
  • 1 tablespoon Olive Oil

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Melt butter in a skillet, and sauté onion, garlic, and green bell pepper over medium heat for about 5 minutes.
  3. Add bread crumbs to the skillet and toast for an additional 2–3 minutes until golden.
  4. Remove from heat and mix in oregano, Parmesan, parsley, lemon juice, salt, and pepper until combined.
  5. Butterfly each large shrimp by cutting along the outer curve, creating a pocket.
  6. Stuff the mixture into each shrimp, pressing lightly.
  7. Drizzle olive oil over the shrimp.
  8. Bake in the oven for 12–15 minutes until the shrimp are pink and the stuffing is golden brown.
  9. Serve warm with your favorite sides.
