- Melt butter in a skillet, and sauté onion, garlic, and green bell pepper over medium heat for about 5 minutes.
- Add bread crumbs to the skillet and toast for an additional 2–3 minutes until golden.
- Remove from heat and mix in oregano, Parmesan, parsley, lemon juice, salt, and pepper until combined.
- Butterfly each large shrimp by cutting along the outer curve, creating a pocket.
- Stuff the mixture into each shrimp, pressing lightly.
- Drizzle olive oil over the shrimp.
- Bake in the oven for 12–15 minutes until the shrimp are pink and the stuffing is golden brown.
