Step-by-Step Instructions for Maple Bourbon Braised Beef
- Preheat your oven to 325ºF (170ºC).
- Generously season the short ribs with kosher salt and pepper. Dust each rib with flour.
- In a Dutch oven, heat olive oil and sear the ribs for about 5 minutes on each side until browned.
- Add onion, celery, and carrot to the pot, sauté for 6 minutes, then stir in tomato paste and thyme.
- Add garlic, bourbon, maple syrup, and beef stock, then deglaze the pan and bring to a simmer.
- Return the ribs to the pot, cover, and braise in the oven for 3 to 3½ hours until fork-tender.
- While the beef is braising, prepare the mashed potatoes by sautéing shallots and boiling potatoes until tender.
- Mash potatoes with cream cheese and butter, blending until smooth.
- Serve the braised ribs over the mashed potatoes, drizzled with the braising sauce, and garnish if desired.
