- Pat dry the chicken fillets. In a small bowl, mix Cajun seasoning, paprika, garlic powder, onion powder, salt, and pepper. Coat the chicken generously with the seasoning.
- Place the seasoned chicken fillets in the crockpot. Layer sliced bell peppers and onions over the chicken. Pour chicken broth around the ingredients.
- Cover and cook on low for 6 hours or high for 3 hours until the chicken reaches an internal temperature of 165°F.
- Shred the chicken in the crockpot, allowing it to absorb the juices. Serve over rice, garnished with fresh parsley and sour cream.
