Step 1: Season Chicken
- Pat the chicken fillets dry. In a bowl, combine Cajun seasoning, paprika, garlic powder, onion powder, salt, and pepper. Rub this mixture over the chicken.
Step 2: Layer Ingredients
- Place the seasoned chicken in a single layer in the crockpot. Add sliced bell peppers on top and pour chicken broth over everything, ensuring chicken is submerged.
Step 3: Cook
- Cover the crockpot and cook on low for 6 hours or on high for 3 hours.
Step 4: Serve
- Remove the chicken from the crockpot. Serve whole over rice or shred in the pot. Drizzle cooking liquid over the chicken.
