Step-by-Step Instructions
  1. Season the chicken thighs with salt and pepper on both sides.
  2. Set the Instant Pot to 'Sauté' mode and heat the olive oil for about 2 minutes.
  3. Add the seasoned chicken thighs and brown for 5–7 minutes on each side.
  4. Remove chicken from the pot and set aside.
  5. Add garlic, thyme, and rosemary to the pot, and sauté for about 1 minute.
  6. Pour in chicken broth and lemon juice, scrapping browned bits from the bottom.
  7. Stir in orzo pasta and ensure it’s evenly distributed.
  8. Nestle the browned chicken thighs back into the pot.
  9. Close the lid and cook on high pressure for 6 minutes.
  10. Allow for a natural pressure release for 5 minutes, then perform a quick release.
  11. Fluff the orzo with a fork, mixing in chicken and herbs, and adjust seasoning.
  12. Serve warm, garnished with fresh herbs.
