For the Sweet Potatoes
  • 2 medium Sweet Potatoes butternut squash can be a substitute
  • 2 tablespoons Extra-Virgin Olive Oil can swap for avocado oil

  • 1 can Black or Pinto Beans canned for convenience
  • 1 cup Cottage Cheese Greek yogurt or silken tofu can be used
  • 1 bunch Fresh Cilantro or parsley as an alternative
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Garlic Powder
  • 1 cup Cheddar, Pepper Jack, or Monterey Jack Cheese dairy-free cheese for vegan option
  • to taste Hot Sauce omit for a milder experience
For Toppings
  • 1 medium Diced Avocado
  • 2 wedges Lime or lemon as a substitute
  • 2 tablespoons Roasted Pepitas or your favorite nuts or seeds

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 425°F (220°C). Cut sweet potatoes in half lengthwise, drizzle with olive oil, and season with half the salt. Place cut-side down on a baking sheet and roast for 25-30 minutes.
  2. In a large mixing bowl, combine black or pinto beans, cottage cheese, and chopped cilantro. Add cumin, paprika, garlic powder, and remaining salt, then mix well.
  3. Once the sweet potatoes are tender, scoop out the flesh, leaving a little for structure. Mix the flesh with the filling ingredients until well combined.
  4. Increase the oven to broil. Sprinkle half the remaining cheese into each potato skin and broil for about 2 minutes until melted and golden.
  5. Fill the sweet potato skins with the bean mixture and top with remaining cheese. Broil again for 2-4 minutes until bubbling.
  6. Top with diced avocado, cilantro, lime juice, and pepitas. Serve warm, adding hot sauce if desired.
