Ingredients
  

Base
  • 2 tablespoons Olive Oil or any cooking oil
  • 1 medium Onion chopped
  • 3 sticks Celery chopped
  • 4 cloves Garlic minced
Stew
  • 1 pound Lean Ground Beef or ground turkey/chicken
  • 3 tablespoons Flour gluten-free flour can be used
  • 1 can Tomato Paste 6 ounces
  • 4 cups Beef Broth more if needed
  • 1 tablespoon Worcestershire Sauce or soy sauce
  • 1/2 teaspoon Italian Seasoning or dried mixed herbs
Vegetables
  • 2 pieces Russet Potatoes peeled & diced
  • 4 medium Carrots peeled & sliced
  • 1 cup Frozen Peas optional
  • Salt & Pepper to taste

Method
 

Cooking Steps
  1. Heat the olive oil in a large soup pot over medium-high heat for about 2 minutes.
  2. Sauté the chopped onion and celery for 5-7 minutes until they soften and become translucent.
  3. Add minced garlic and cook for an additional 30 seconds until fragrant.
  4. Brown the ground beef for about 8 minutes, breaking it up as you cook.
  5. Sprinkle flour over the mixture, stirring for 1-2 minutes to eliminate the raw taste.
  6. Stir in tomato paste and cook for another 1-2 minutes until all ingredients are combined.
  7. Pour in beef broth, Worcestershire sauce, and Italian seasoning. Add potatoes and carrots, and bring to a rapid boil.
  8. Reduce heat to low, cover partially, and simmer for at least 30 minutes.
  9. Stir in frozen peas and adjust seasoning with salt and pepper before serving.
